So these guys are not praying in public places to show off, yet, there just so happens to be someone on hand to take a picture and post it online?

You are right that there might be showing off in some cases. But in general the point is that Muslims have obligatory prayer which have to be performed at a specific time. So if there is no mosque or private place to get in it will have to be performed somewhere outside.
So take this in account before you say it is showing off. It might be showing off. Just look at the specific case more closer.
